Many Americans don’t eat the suggested amount of vegetables per day, even though it can decrease our risk of disease. Use Fresh Veggies Day to learn about vegetables, why they are important and how you can eat more of them.

We Just Don’t Eat Enough Vegetables

American Adults don’t eat enough vegetables. They didn’t 20 years ago and they don’t today. Despite encouraging kids to eat their suggested two or three cups a day, adults are missing the mark by two cups. The amount of Americans that fail to eat enough vegetables tallies up to a whopping 87 percent.

Eating your vegetables has many health benefits. The nutrients in vegetables are required to maintain your body’s well-being. The Center for Disease Control reports that people can lower their risk of cancer, heart disease, stroke and diabetes by eating five servings of fruits and vegetables a day.

What is a vegetable?

A vegetable is different than a fruit. Fruits contain seeds, but vegetables come from leaves, stems or roots. Some types of food cannot be easily identified. Tomatoes, olives, eggplants and pumpkins are fruits. Rhubarbs are vegetables, but mushrooms and strawberries are neither. Strawberries are actually considered an accessory fruit.

How to eat more veggies

Eating more vegetables can be hard if you are not used to eating them. Some tricks can help you learn how much to eat and how to make the vegetables more palatable. A tip for eating more vegetables is filling half your plate with fruits and veggies, or try eating a salad before dinner.

If you don’t like the taste of vegetables, try adding them to the foods you already eat. Some vegetables won’t change the taste of your meal, while some will enhance the flavor. Some places you can sneak vegetables in are your smoothies, omelets, stir fries, casseroles or even ground meat.

Veggies are important!

It doesn’t matter how you eat your veggies, just eat them. With so many different kinds of vegetables, you can find one that you like, or hate the least, and make that your go-to vegetable. Eating your vegetables is paramount for your daily functions and overall health. Stop making excuses and become a better you.
